Day 7: The mighty lasagne

Oh what a wild ride it has been. The mighty lasagne seemed to be a worthy choice for the last supper. It was saved for execution on a Sunday as it takes forever to make and assemble. Alas we are eating at 9pm - this is way past my eating time. I'm writing this blog post whilst the lasagne is resting. So apologies if the tone is hangry.

Recipe

For this epic journey (just talking about the lasagne here), the recipe for the bolognese and béchamel from Bon Appetit was followed. It's 'BA's Best'. If you're going to make fresh lasagne sheets, just use the usual pasta dough ratios (see dough section in tagliatelle). However, the only difference is that for these sheets, you roll through the pasta machine until the second to last setting (i.e. thin but not the thinnest). I also recommend that for a tray/dish of the below size (see photo below) with four layers, 3 eggs (and 300g of 00 flour) is enough. We used four and this is verging on pasta week two territory as there is leftover dough....

Postscript: It doesn't fall short of that high accolade. However, it is a half-day event. It is also recommended that you have a glass of wine in hand for the process.
